Bacon Wrapped Trout

The Stockyards Restaurant in Phoenix recently re-opened for business. Even though the refurbished restaurant has maintained a classic steakhouse menu, there are a few non-steak items on the menu worth trying. One of those items is the Bacon Wrapped Golden Trout. It is stream trout stuffed with wild rice, rock shrimp and lemon caper brown butter that is then wrapped in bacon. I highly recommend trying the Stockyards Restaurant - for the trout and for the classic Arizona experience.

Bacon, America

There are six towns in America named "Bacon" according to MapQuest, including one in my homestate of Idaho. Now I know where they claim Bacon, Idaho is located, and I can guarantee you there is nothing there, but at least the Gem State is paying proper respect to the best meat ever. Other towns named Bacon are in Indiana, Missouri, Ohio, Texas and Washington. Hopefully someday I will be able to visit each of these meccas.

Calling all cheeseheads...

If you can't make it to Austria for the Gailtaler Speckfest...Augusta, Wisconsin has an annual "Bean and Bacon Days" celebrated each year the first week in July. And you can probably still get away with wearing lederhosen.

Bacon and Cheese Fondue

Bacon and Cheese Fondue
Serves 4

Ingredients
-8 strips of fully cooked bacon, finely chopped
-1 package of cream cheese (8 oz), softened
-1 package light processed cheese spread (8 oz), softened
-1 cup heavy cream

Directions
Cut both cheeses into 1-inch cubes and place in a microwave-safe casserole. Cook at 75% power in one minute increments, stirring before starting again. When cheese is hot and melted, stir in bacon pieces. Allow cheese to cool slightly while bacon flavors develop. Add heavy cream until fondue reaches desired consistency. Serve with chunks of bread and fresh sliced apples.

Bacon and Cheese Oysters


You just can't go wrong mixing bacon with seafood.

Bacon and Cheese Oysters

Ingredients
-36 oysters in the shell
-12 ounces low-fat mozzarella cheese, grated
-1/2 cup chopped, cooked bacon
-4 fresh jalapeno peppers, sliced thin

Preparation
Wash oysters thoroughly. Shuck and place oysters in deep half shell removing any remaining particles of shell. Arrange on baking sheet and top each with 1/2 tablespoon of cheese, a sprinkle of bacon and one sliced pepper. Bake in a preheated oven at 350 F degrees for 10 minutes or until edges of the oyster begin to curl.

Philadelphia Cheesy Bacon Topper

PHILADELPHIA CHEESY BACON TOPPER

1 pkg (8 oz) Philadelphia Cream Cheese
1/3 cup Oscar Meyer Real Bacon Bits
1/4 cup Grey Poupon Country Dijon Mustard
1/2 cup Kraft Mozarella Shredded Cheese
Ritz Crackers

Place unwrapped block of cream cheese on microwaveable plate. Top with bacon bits, mustard and cream cheese. Microwave on high for 45 seconds. Serve with Ritz crackers. Makes 24 servings.
