Bacon Crisps

My mom pointed out a recipe on the Food Network website that looks like a tasty snack.

Bacon Crisps

Makes: 24 crisps

1/2 cup freshly grated Parmesan
1 sleeve buttery rectangular crackers (recommended: Waverly Wafers)
1 pound sliced bacon, cut in 1/2

Preheat the oven to 250 degrees F. Place 1 teaspoon of the cheese on each cracker and wrap tightly with a strip of bacon. Place the wrapped crackers on a broiler rack on a baking sheet and put the baking sheets on the oven rack. Bake for 2 hours, or until the bacon is done. Do not turn. Drain on paper towels. Serve hot or at room temperature Cook's note: You can also bake at 350 degrees F for 40 minutes if you're in a hurry!

Was Elvis a bacon lover?

A friend of mine, Todd, alerted me to this interesting little piece of information.

Apparently one of the many things Elvis Presley was famous for was an extravagant trip he took to Denver, Colorado in 1976 to pick up 22 Fool's Gold sandwiches, which ended up costing him $3387.

This 42,000-calorie sandwich is made from a hollowed-out loaf of oven- toasted bread filled with one large jar of grape jelly and Skippy peanut butter plus a pound of bacon.

That's a big hunk o' bacon love.

Bacon and Meatloaf

The following recipe appeared on ABC earlier this week.

Monday Meatloaf

Meatloaf:
1½ lbs ground beef (20% fat)
½ lb ground pork
2 eggs
½ cup milk
1 tsp onion powder
½ tsp celery salt
½ tsp ground black pepper
½ tsp garlic powder
1 tsp ground mustard
1 Tbsp Worcestershire sauce
¼ tsp dried thyme, crumbled
¼ tsp rubbed sage
1 tsp salt
2 medium carrots, shredded fine
1 cup dried breadcrumbs (plain)

Sauce for Topping:
½ cup tomato catsup
2 Tbsp honey
1 Tbsp Dijon mustard
Pinch cayenne pepper
3 slices cooked bacon (cooked through, but still limp, not cooked crisp)

Preheat oven to 350 degrees.

Crumble beef and pork in a large mixing bowl and set aside.

In a small mixing bowl, combine the next 11 ingredients and mix well with a fork so that eggs and milk are thoroughly combined with spices. Add the egg mixture to the meat and mix gently with a fork to disperse the egg mixture into the meat. Add the breadcrumbs and carrots and combine all ingredients thoroughly — your hands are the best tool for this job! Once the meatloaf mixture is combined, shape it into a loaf in a 9 x 13 inch shallow baking pan. Shape the loaf with your hands to resemble a loaf of bread, but do not let the meat touch the sides of the pan (this will allow the meatloaf to brown beautifully on all sides and will give the fat space to drain away from the meat). Bake in a 350 degree oven for 50-60 minutes, or until the meatloaf is cooked through (165 degrees).

While meatloaf is cooking, combine the catsup, honey, mustard and cayenne in a small bowl and mix well.

During the last 15 minutes of cooking, top the meatloaf with the sauce and bacon. Coat the top of the bacon with a little sauce, so it does not burn.

Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. It's best served with mashed potatoes!

Serves 4-6 people.

Barney Bush

President Bush's dog, Barney, cracks me up. I don't know why I enjoy his Christmas tours of the White House as much as I do, but I just do.

The White House occasionally posts photos of Barney on the White House website. And whoever manages the website also writes funny little captions to go with the photos. Here's a link to one about Barney being in trouble for eating someone's BLT...

Street Bacon

Whenever I'm in Idaho visiting the fam, one of my favorite things to do after a night of bar hopping in Boise is to have a chorizo from a street vendor. In any other city in the world, I generally have a rule against eating food sold on the street (I've seen one too many Dateline specials). But for some reason the chorizo in Boise is my exception.

And if you're wondering what is so special about chorizos in Boise, you might be interested to know more about the history of Basque culture in Idaho. For some reason there are a lot of bascos in Idaho - something to do with sheep.

Anyways, this past weekend I decided to experiment with other Boise street cuisine beyond my normal chorizo craving. I had what is called "Chick Bacon on a Tater" sold by the vendor regularly found at the corner of 6th Street and Main. This little treat was so delicious that I actually ended up having it two nights in a row (and wearing some of it the second night). The "CBT" contains chicken breast, 4 strips of bacon with mesquite BBQ sauce, and baked potatoes wrapped in a tortilla with a choice of mayo, cheese, onions and jalepenos. All for the bargain price of $5.00.

The same vendor also sells items called "Bacon the Chick" and "Bacon the Weiner." This guy totally gets it. His chorizos are also fantastic. So if you are ever drunk and in Boise, I highly recommend paying him a visit.

A super-Sonic breakfast sandwich

Yesterday morning I had the new Breakfast Bistro Sandwich from Sonic. For you unfortunate souls on the east coast who don't know the joy of Sonic, it's a drive-in restaurant chain that's super delicious.

Here's the description of the Breakfast Bistro Sandwich from the Sonic website:

"People describe the new Breakfast Bistro Sandwich as superior, highfalutin and delightful. It's egg, cheese and your choice of bacon, sausage or ham on bakery fresh ciabatta bread. We would describe it as yummy. Only at SONIC."

Of course I had the version with bacon. So not only was this sandwich delicious because it had bacon on it, but Sonic is very generous in the amount of bacon they put on the sandwich and it is by far the dominant ingredient. It was also cooked to crispy perfection.

The Breakfast Bistro Sandwich at Sonic definitely rates as one of the best breakfast sandwiches out there. I highly recommend it.
