More Meat Candy
Candied bacon seems to be very popular at the moment. It is popping up all over the place.

- The Boston Globe just published a recipe for making candied bacon with brown sugar and orange juice.
- A few weeks ago I wrote about Brick 29 in Nampa, Idaho, which features a really fantastic BLT made with caramelized bacon.
- I also recently highlighted a recipe for maple dijon glazed bacon that I found at Nook and Pantry.
- There was also my own experimentation with caramelized bacon a couple months ago. My brother and I coated strips of bacon with brown sugar that we then cooked on the grill.
- Here's a link to another recipe for candied bacon that was posted on Epicurious earlier this year.
- And a quick Google search for "candied bacon" produces hundreds of other results such as this and this and this and this. Flavoring the candied bacon with pepper flakes or mustard is a popular variation.

The German food blog "Rettet das Mittagessen" ("Save the lunch meal") has a recipe with brown sugar, ginger, and cayenne pepper. Check out those pictures, they make my mouth water!

Another recent candied bacon reference...in James Villas' new book, The Bacon Cookbook, he includes a recipe for lacquered chinese bacon.
