BLT Cocktail

I recently received an email promoting a recipe for a BLT Cocktail created by mixologist Brent Jones of Hotel Jerome in Aspen, Colorado. It's timely for me to share this with you because Chef Dustan Bristol of Brick 29 in Nampa, Idaho has also been experimenting with making his own BLT Cocktail to serve at our Blue Ribbon Bacon Tour event two weeks from tomorrow.

The thing that Jones and Bristol are doing that is a departure from most bacon/tomato cocktails being served around the country is they aren't just creating a variation on a bloody mary. Instead, they've created a refreshing, summer cocktail made from the juice of fresh tomatoes.

Below is the recipe for Brent Jones' BLT Cocktail. He makes his own bacon fat washed vodka, but if you don't have the time or energy to make your own bacon vodka, you can also just pick up a bottle of Bakon Vodka (which will also be featured at our event in Nampa on August 1).

Click here to purchase tickets for the Blue Ribbon Bacon Tour event in Nampa, Idaho on August 1 if you haven't already and hope to see you there!

The BLT Cocktail
by Brent Jones of Hotel Jerome in Aspen, CO

"The BLT is one of those cocktails that has a very different and unusual response amongst its tasters. More often than not I hear the same reactions “wow, I did not expect that”. The combination of flavors is reminiscent of the very thing that influenced its creation: the Bacon, Lettuce & Tomato sandwich. One evening while tending the bar at The Library in the Hotel Jerome, Aspen, CO we had a new food menu released. One of the new seasonal additions was a completely organic BLT made with fresh in season tomatoes, crispy bacon, and iceberg lettuce. That evening I had sold a couple of them, and by the end of my shift was craving a BLT for myself. At the end of the night while working on my closing side work, I could not stop thinking how great it would be to have a BLT. I could not recall the last time I had one, at least two maybe even three years. Then it dawned on me, lets try to make a BLT cocktail. As I imagined the BLT as a cocktail, I broke it down to its three main components.

1. Bacon Fat Washed Vodka : Fat washing is a method of extracting flavor from fat, without the greasy texture. I first encountered this method while taking the Beverage Alcohol Resource (BAR) class in New York City.

Ingredients :
1lb of uncooked bacon
750mL vodka

Method : Cook the bacon, collecting the fat. Dump the vodka into a minimum volume 1 liter container. It should be noted to use a container with a large opening, perhaps a mixing bowl. Heat the bacon fat until it becomes a liquid, and pour it into the bowl containing the vodka. Stir
and let the bowl set at room temperature for a minimum of 2 hours. Place the bowl in the freezer for 1 hour to congeal the fat, finally strain and filter the liquid. A strainer or chinois, and a common coffee filter will do the trick.

2. Tomato Juice : While it seems like a no brainer to use a can of tomato juice or V8, fresh made seasonal tomato juice is well worth the effort.

Ingredients :
1 tomato (or as many as you would like)

Method : Fill a Large sauce pan filled 3/4 full with water, and bring to a very light boil. Blanch the tomato in the hot water for 15 seconds, remove and allow to cool. Peel the tomato using a pairing knife, pulling away the skin. Throw the skinless tomato in a blender or a juice extractor, and strain the juice using a chinois.

3. Lettuce Air : As a molecular mixologist, I am constantly conducting new experiments on cocktails. Earlier the same day (just prior to the BLT idea) the Hotel Jerome executive chef Chris Keating and I were experimenting with soy lecithin. Lecithin is a phospholipid most commonly used in the culinary field as an emulsifier and/or to make an air (very similar to a foam). Given this nature, we thought there could be a possible use for it in constructing cocktails.

Ingredients/tools :
4 oz lettuce juice
1/2 tsp soy lecithin
2 oz water
aerolatte milk frother

Method : Extract the juice from the lettuce using either a blender or a juice extractor. If using a blender, be sure to strain the juice using a chinois. In a container (5 inches wide or larger) combine 4 oz lettuce juice + 2 oz water + 1/2 tsp soy lecithin and mix with an aerating device. In this case, the aerolatte milk frother works well. If more air is desired, just add some more soy lecithin to the same solution, and mix.

4. Making The BLT
Glassware :
Small sherry glass

Ingredients :
1 oz Bacon Fat Vodka
Lettuce Air
2 oz Tomato Juice
Salt & Pepper

Method : Using 2 mixing glasses, fill one with ice. In the empty glass combine a few shakes from both the salt and pepper shakers, the bacon fat vodka, and the tomato juice. Pour the mixture over the other mixing glass containing the ice, and continue to mix by pouring the iced solution back and forth 3 or 4 times. Using a julep or hawthorne strainer, strain the liquid into the sherry glass and top it off with the lettuce air.

Blue Ribbon Bacon Tour Phoenix Recap

Find more photos like this on The Bacon Nation

We all managed to survive the Blue Ribbon Bacon Tour's stop in Phoenix this past Sunday (although some of us are still recovering...). It was a really great day and there were several dozen super fun people in attendance. Our gracious hosts at Renee's Grand Tavern threw an amazing party, the Vande Rose bacon was beyond delicious, and Bacon Restaurant did a most excellent job of creating bacon appetizers and desserts for everyone to enjoy - including bacon wraps, BLTs, bacon cookies, and many, many strips of glorious bacon.

We'll be announcing more Bacon Tour cities/dates in the next few days, so stay tuned!

Getting ready for Bacon Fest

I'll be appearing on Good Morning Arizona on Channel 3 in Phoenix tomorrow morning around 8:50 am MT. I'll be on the show with the owners of Bacon Restaurant in Scottsdale, who will be catering the Blue Ribbon Bacon Tour event at Renee's Grand Tavern on June 7. Click here if you haven't purchased your tickets yet.

Vande Rose Farms out of Iowa is the presenting sponsor of the tour, so I'm taking some of their bacon with me to tomorrow's GMA appearance - until then their bacon is hanging out in my fridge, taunting me and making me very hungry every time I open the door.

Bacon Unity

Following is a photo from one of my favorite moments yesterday. One of the best things about this year's Blue Ribbon Bacon Festival is that it brought together several of us who are active in the bacon blogosphere. Some of us have been interacting online for a few years but yesterday was the first time most of us had met in person. This is an awesome group of people I'm glad I've had the pleasure of getting to know over the years thanks to our unusual bond. The Bacon Nation is strong and we definitely know how to have a good time!

Happy National Pig Day

Today is National Pig Day (although the holiday isn't official yet - support our cause to make it a real holiday by joining us at the Bacon Nation or on Facebook). After yesterday's gluttonous festivities at the Blue Ribbon Bacon Festival, unfortunately I won't be indulging in copious amounts of bacon to celebrate the day (although I did have some sausage for breakfast).

It's only appropriate to mark the holiday by sharing video from yesterday's bacon eating contest at Bacon Fest. For the second year in a row, the winner was Manni Balignasay. Click here to read a Metromix interview where Manni talks about what he did to win last year's contest. And here's a photo of me with the reigning bacon champ after his victory yesterday.

Following is a video of the bacon eating contest. And if you missed coverage of Bacon Fest yesterday, you can click here to read our Tweets from throughout the day.

Blue Ribbon Bacon Festival

Do you love eating bacon? Do you love drinking PBR? Do you live in Iowa or have you been waiting for the right time to visit? If so, I've got the perfect event for you!

New Event Celebrates Iowa’s Love Affair With Bacon on National Pig Day
Blue Ribbon Bacon Festival to include lecture, showcase and samples galore

January 22, 2008 (Des Moines, IA) – What started as one man’s passion for “all things bacon” has evolved to an entire event dedicated to the salty indulgence. Brooks Reynolds of Des Moines approached Full Court Press and In Any Event in the summer of 2007 with the idea and the festival was born: a day dedicated to nothing but Bacon – the Blue Ribbon Bacon Festival. Reynolds recruited fellow bacon lovers and the group formed the Iowa Bacon Board of Directors. Informal meetings of the group have been held for years with weekend retreats at Spirit Lake where each bacon fanatic would bring at least two pounds of bacon for consumption over a two-day period.

“Most people feel they should be ashamed of their affinity for bacon.” Reynolds said. “We are encouraging individuals to embrace their inner bacon-lover and celebrate this product which is largely produced right here in Iowa.” He added. “We have world-class pork producers from around the state who finally have a forum dedicated solely to bacon.”

The first annual Blue Ribbon Bacon Festival will be held on Saturday, March 1 @ the High Life Lounge and el Bait Shop – 200 SW 2nd - Downtown Des Moines from 10am – 4pm. Cost for the event is $30 and space is limited to 120 bacon fans. Entry fee includes a commemorative t-shirt, bacon bracelet, a menu of 7 bacon items, unlimited samples at the Bacon Showcase, a seat in the Bacon 101 lecture and your first drink. $1 Pabst Blue Ribbon draws will be available until 5 p.m.
